When no more sugar can be economically crystallised from the factory liquors and syrups, the final liquor is known as "Molasses". This is stored in large tanks until collected by customers who use it primarily as a feedstock in fermentation processes, where the end products can be baker's yeast, or industrial alcohol, or even citric acid. Typically, Nile Sugar molasses is available throughout the year at 80 brix, 59% purity and 8.0 ph. Nile Sugar's 2011 production will reach 45,000 tonnes.
